    As a Grumpy Old Man, "We are going to sear the meat to lock in the juices" is wrong wrong wrong. Meat is basically strands of porous protein fibers, and will never 'Seal', only the bits at the contact surface seal. Ish. The juices continue to escape! Grumble Grumble Snarl....

    lol why did they let the level 3 make “seafood chili”? which is basically gumbo... It’s so out of place. They should’ve required to be a meat chili, with beef or chicken

    I did not like Chef Chris on Top Chef. He always seems so pretentious. I was hoping to learn how to make a better chili, not Seafood Gumbo.
