    The best lasagna is made with ricotta, if you don't use ricotta make a bechamel sauce. If you dont use either of those methods, then it's not lasagna, its Italian casserole.

    Why wouldn't you make it the traditional way? Starting from the whey and adding fresh milk to it? It's called ricotta cause you re-cook it, so you should get the cheese out first with some rennet, then you use that whey to re-cook milk in it and get ricotta. Just curious since I've seen many videos using this style, but in Sicily this isn't how it's made.

    Watching you guys while waiting for my curd to set :) Chevre, hopefully.
    Edit: As of now, I got as much as something between a golf and a tennis ball worth of curd from one quart of goat milk.
    No more curd is setting after this mini bit. I used 1/4 cup of fresh lemon juice when taking it off the hotplate, but I also put
    1/3 cup of yoghurt in it... so I figured,.. maybe I would need some more lemon juice.. which I added AFTER the first strain.. but it's not helping either.
    The whey residue looks like it still has some goodies in it, that I can't solidify basically. Any tipps? Would vinegar maybe be better next time?
    Help would be very much appreciated!
