    You lost me at "organic" egg. There is no chemical difference between organic and non organic egg. Also you can have organic eggs and still have them in confined chicken farms (so there's no animal welfare benefit).

    The tips you use are the same that I try to tell people. I couldn't stand with my father put milk in the eggs. You make your scrambled eggs the exact way I do and crack your eggs the same. Making eggs different ways was the first thing I learned when I started cooking.

    cook your fried eggs on lower heat, they absorb less of the fat and remain moist instead of that crunchy/chewy texture. Mo butter mo better!

    Fried eggs tip Moroccan style: Use olive oil. season it with salt. When your eggs are finished put some cumin on the yolks. Add two pieces of la vache qui rit cheeses on your eggs. Add a thick hot sause with it or add two sliced salami. Put it on a plate and pour generously some more olive oil over the yolk. Eat it with roasted bread or baguette.

    I LOVE French Parisian style omelette, and am actually really good at making them.
    But there’s nothing wrong with classic bifold country style omelettes loaded with veggies, slightly more cooked.

    Wow! I have made poached eggs several hundred times and always use a shot of vinegar in the boiling water. I have never tasted even a hint of vinegar in my egg. It was very visible in her poached egg that it did not set properly.

    Wal Mart offers a very inexpensive French omelet roller. Set the omelet 3/4 the way on a paper towel and roll it by pulling up on the paper towel. Seems too easy to be true, but it's true.

    I like the way vinegar makes the egg whites taste. And I like a faster boil as it helps the egg stay together - no need to create vortex. You can’t do a vortex with multiple eggs, which is why professional kitchens don’t do that

    This poaching method is fine for home. But it’s totally impractical for a restaurant kitchen on a brunch service. In that setting the vinegar is essential & it does not effect the taste.
