    I chuckled a bit when you said “it’s a custard pie so it has to have eggs” lol. A couple years ago, my mom was in the hospital for thanksgiving, so I made all the dishes so I could bring them to her. Pumpkin pie was last on my list, thinking I’d made it a million times and I wouldn’t need to think too much. Well, by the time I made it, it was probably 3am. I had it in the oven for at least 2 hours and it was not setting up at all, I sat on the floor and was basically sobbing in front of the oven wondering what I did wrong. Well... I forgot the eggs... in a custard pie... 🙃

    I only have a 11'' (28cm) pie dish can I still use the same recepie? You used a 9'' one but I saw that you had some extra filling left and I think I am gonna use a other recepie for the crust any ways

    I made this recipe using a chocolate graham cracker crust (pre-made) to cut down on the work load/time and it turned out great. I actually made two pies, the first one I mixed by hand and it had an interesting gritty texture from the canned pumpkin. The second pie I mixed with an electric mixer and the consistency was much smoother. I also added more bourbon to the second pie and the flavor was better. Great recipe!

    For me the reason I love watching Claire is that she is so genuine. She constantly says that what she made is "really good" and in the gourmet chef series she is constantly burned out and I love how she reacts by having an existential crisis and still always delivers.

    If you ever decide to revisit this recipe, I've found that Kenji's writing on sweetening pumpkin puree by heating sous vide at 155F helps to enhance the pumpkin flavor of homemade puree.

    I am finding this way too difficult to follow. The pastry making was skipped completely. Then those beads were poured in at 1:47 without any explanation.

    So how come you can't use the broiler for this instead of a torch? I know it says it'll melt the filling, but it's a baked custard just like creme brulee which you can do under the broiler.....I'm confused

    Wonderful, but one small complaint: the cooking tips in the white boxes appear and disappear too quickly to read or pause the video in time after noticing them. If they could last about a second or two longer, it would be much easier. But yeah, great job on the pie.

    This is one of my favorite videos from BA or from Claire. This pie seems delicious!
    I know this is a dangerous thought, but my mother is dairy-free. Otherwise, I think she would love this pie. I have never really baked with dairy substitutes and I’m worried about mouthfeel and stability. Do you or any commenters have dairy-free ideas to make this?

    Anyone else having issues with the pie crust? Mine isn’t turning out flaky and tastes more like the chocolate cookie part of an ice cream sandwich. Help!

      If it's not flaky you may be having issues with keeping the butter cold. Use a food processor or blender to mix very cold butter (straight out of the fridge) and flour (with cocoa powder if desired) and use ice water to help bind it. Take it out and then knead together as fast as possible, put in the fridge for at least an hour or two before using. Put in the pie tray and then refrigerate again before baking. #1 goal keep the butter cold!
