      My Mum starts kvass with a piece of sourdough bread. Drinking beet kvass help when ypu have iron deficiency. You can use it as an ingredient of bortsch - beet soup. BTW maybe you could make a bread kvass, it's a great refreshing drink 🙂

    My family has been drinking kvass(not me, I hate the taste) for forever and I've never heard of beet kvass (and we use beets a lot in everything else like borscht and a ton of salads) but I definitely wanna try that.

    this is not actually a great drink for your kidneys if you're prone to kidney stones. The oxalates in the beets are a primary source of kidney stones in people who are prone to them!

    Add a bit to fruit juice and you'll get a natural, earthy fruit soda. Also, if you don't let it ferment for as long the second time you'll have plenty of fizz and less of the sugar will be eaten up by the bacteria. Damned good stuff, though!

    I think it is not safe to ferment with 1% salt. Does it not have to be 2+ to be safe from unwanted bacteria ?

    so..do something with za'atar if you like sumach, the one I use (great for oven-potatoes or anything potato.. yeh, the german in me is shouting) has sumach in it and some other stuff and it is delishiiooouuuus

    I would really like to see Brad make fermented Bulgarian yogurt as the culture it's made with is very specific and named after the country itself (it's called bacillicus bulgaricus, dont know if he can buy that online?) but the taste it produces I have not found anywhere else, no matter where I have gone to live fermented bulgarian yogurt is the best yogurt end of. Use cow's milk or bison milk. I would be very happy to see an episode on this.

    I ferment a lot of stuff. .. He he.. being from Easter Europe :) Brad, try tomatoes, not green ones, but red. Brine - 3 tbs sugar, 2 tbs salt, garlic and fresh dill (for 1 liter of water), some cayenne too. It's our favorite... Regarding beet kvas.. Yeah nobody does it, in Ukraine at least.. But I tried to make it - what a yucky stuff.. But I'm not giving up on it and will be trying again and again with diff additions just because, yeahh, it's healthy. And of course, thank you! Your videos very lively, entertaining, loose and educational - way to go!

      Wouldn't recommend it. Bottled beer tends to be sanitized and filtered, so no yeast. Even a raw, unfiltered beer will not have much yeast left alive, as it dies out when the alcohol level rises..plus, I guess it could be rather bitter for the hops. You are better off with fruit juice and ginger. Pineapple and other fruits with a thick rind work nice

      Most likely, kosher. A lot of kitchen tend to use only kosher because it's flakier and sticks well, so I wouldn't be surprised if he just used what they had already
